Recipe :

  1. Prepare the dough:

    Place the puff pastry in the freezer for a few minutes to make it easier to spread the cream.

  2. Prepare the chocolate frangipane:

    In a bowl, mix the almond powder, sugar, OptiVegan and cocoa.
    Add the cashew puree, diluted peanut powder, milk, flavoring and starch.
    Mix well until you get a spreadable and homogeneous cream.

  3. Assembling the giant roll:

    Unroll the dough and spread the cream all over it.
    Cut 6 long strips.
    Roll them to form snails.
    Place gently in a greased dish.
  4. Cooking :

    Brush the surface with a little vegetable milk.
    Bake at 180°C for 35 to 45 minutes, until the pastry is golden brown and crispy.

  • 1 sheet of puff pastry (pure butter or vegan)
  • 80 g of almond powder
  • 20 g of whole sugar
  • 10g Sucraline
  • 40 g of OptiVegan chocolate
  • 25 g cashew puree
  • 25g of defatted peanut butter powder (diluted with a little milk)
  • 100 ml of vegetable milk
  • 1 tsp bitter almond flavoring (optional)
  • 1 tsp unsweetened cocoa (optional)
  • 1 tbsp cornstarch
